Italian "Sausage" Soup

1 pkg of organic fat-free, low sodium chicken broth
1 pkg of lower fat ground turkey
red chili flakes
fresh basil
garlic
1 can diced peeled tomatoes
oregano
1 bag of fresh spinach
EVOO spray

Start the broth simmering with garlic, oregano, and fresh basil to taste. Also add in the fresh spinach and peeled tomatoes. Roll the ground turkey into little balls with red chili flakes (gives it a similar flavor to sausage) and sautee with EVOO spray and some garlic. After the turkey is about 1/2-3/4 way cooked, add to soup and continue to simmer until all the turkey is cooked.

Barbecue Chicken Soup

1 pkg of organic fat-free, low sodium chicken broth
1 can fire roasted tomatoes
1 pkg of chicken breast (cut off all fat) (chopped)
Mrs. Dash Steak seasoning

Simmer the broth and add the chopped chicken. Drain the can of tomatoes. Add the tomatoes to the soup. Add Mrs. Dash Steak seasoning to taste. Simmer until all of the chicken is cooked.

French Onion Soup

1 pkg of organic beef broth
1 large red onion (chopped, sliced, however you want them)
EVOO spray
3 bay leaves

In a pot, boil the organic beef broth with the three bay leaves. In a pan, spray EVOO spray and saute the red onion. I like to saute the onion until they are browned. Add the onions to the broth and simmer. Remove the bay leaves and serve.
